US129 great but?
Im back from the "Dragons Tail" had a blast. I have driven lots of challenging roads all over Canada. Hwy 99 from Pemberton to Lillooet BC is 62 miles of break testing, curves and altitude changing fun (and great scenery). I would like to try others, you know, share the wealth Im sure there are plenty of good roads just waiting for summer caravans to come by. Lets hear what yah gots.

My fav drives are in California. There is this one road that connects Napa and Sonoma through a mountain pass that ROCKS. It's literally forty minutes of testing your skills and upper body strength. The other is the Highway from San Jose to Santa Cruz, through the redwoods. Tonnes of elevation change towards the ocean and mad 270 degree corners.

I'm lucky enough to be in the same province as the Cabot Trail. Ashamed to say I haven't been there in years (and haven't taken the RX8 yet) but the last time was on my CBR600.
Aprox 950km of this through the Cape Breton Highlands...

The cabot Trail is on my list of must dos. Great site seeing but I think Joe will concur not quite as challenging as the Dragons Tail or the others mentioned.

BC Highway 6 from the Arrow lakes at Faquier to Vernon. It's an amazing road, there's a long stretch that's twisty, hilly, with no communities , no cops, and the best part is that there's a ferry on the faquier end, so once you get to the front of the line it's clear (there's a fair bit of passing opportunities before it gets interesting). That section's about 95km, with the middle 70 or so being the best part.
I remember one time driving through a small town a ways past the ferry end of the road and seeing Lamborghinis, Ferraris, Porsches and so on, obviously there in a group to drive that road.

West Side Road from Kelowna/Westbank to Vernon.
The Bow Valley Parkway in Banff National Park from just west of Banff townsite to Lake Louise - the rare time it's not congested with motorhomes and tourists. I drove it once couple winters back, when there was a lot of snow and ice on the road - and no one else, in the wife's Saturn (with good snows). Let's just say that under Ontario's street racing law, the entire trip could have got my car impounded.
Both of those roads are bad for wildlife - I've had close calls on both, and not when I was particularly driving hard, so I do tend to be a bit more cautious anymore. Deer through the windshield could ruin a great drive.
There's some great highways SW of Calgary in the foothills around Bragg Creek, Black Diamond, and Turner Valley. I can never remember the route numbers, I just find my way around

Here is a list of good Ontario bike roads, i'm sure we'd enjoy some of the same type of roads as the sportbike guys.

I've personally driven the Rattlesnake point road and Snake road routes listed and they are pretty nice, although I wish they were longer.
