CA First build, needs ideas, opinions, and recomendations

So, I've been driving a '91 Vert 5 speed since about October, and I am absolutely hooked on rotaries. But, as my luck has it, at 257k, the stock NA transmission finally gave way. I've yet to see how it failed, but I picked up another S5 hatchback for a donor trans (and exhaust system to boot!)

But by my terrible life choices, I've decided I want to restore this one, and build it up to be a unique RX just for me. I know it'll be pricey, and I know it'll take a long time, but I am dedicated to making this happen. That said, I have very little knowledge on where to start with this.

The engine doesn't start. I've tried hooking up a battery, and the starter turns it, but I get nothing from it. I got one loud pop, ONCE, it started smoking from the cat, and I haven't tried to start it since. So I just decided that it probably needs a rebuild, and I was going to have a shop do it. Now, while the engine was apart, I was thinking of going for a bridgeport on it, but I've heard bad things about street driveability and noise levels because of it.

So, I guess I'll cut to the point with the engine. What would be recommended I try to get that signature rough idle brap, some flames shooting out the back, while still keeping noise levels at least somewhat reasonable? I've saw talk of half bridge porting, but not much about noise levels was said, and it didn't seem to have the same chop to the idle, if you will.

From how I can see it, I can choose brap and noise, but no flames. Or, get the brap and flames, but with excess noise. Or flames and decent noise, but no brap. Am I really stuck with the triangle of choose 2 sides here?
And if I do decide to test my luck with the bridge with all the downsides, how much power would I be making from an S5 N/A? A friend of mine that works for a shop said with a half bridge, I'd be pushing anywhere from 250-300 HP, and I thought that seemed a bit high really.

Now, for interior, I'm sure I'll need to find the plastic trim if I can, but I was wondering exactly how the carpeting in this works, as it's just bare metal at the moment. I thought about laying out Dynamat and then laying the carpeting in, is that really all it takes?

I know this probably seems like a lot of beginner questions, but this project is still just kind of a dream at the present moment, and I wanna get every recommendation, tip, trick, and estimation that I can possibly get my hands on at the moment.

I'm not an expert by no means. It's still out to be determined if my first build is going to be successful or not.
But what I can tell you is building rotaries is expensive and unless you have a rotary shop in your town you'll have to order everything online.
It's all going to come down to your budget. I wouldn't bridgeport if you're just trying to have something to cruise around town. It's super expensive and impractical for driving around town.
I'd start by pulling your engine 1st and taking it apart to see what your looking at. All that stuff is expensive to replace if anything is unusable.
Make a plan based on your budget and research research and do more researching. Rotary builds add up quick

That just made my night. So.. You have a project ahead of you. I would start learning how to build rotary motors and becoming familiar with the wiring of that car. If you do all your own work you will be much happier in the end.
