Water Temp Sensor Calibration - S4 PnP

Hi there,
I have an S4 T2 PnP, hooked to an S4 N/A car that is now turbo - yeah, it's complicated.
The only real issue I seem to still be having is the water temp sensor on the back of the water pump housing.

The ECU is reading really low on this. For example, the T-Stat will be open and it will only be reading something like 120-140 F, instead of around 180 F which it would need to be for the t-stat to open. This is messing with my warm up, my e-fan triggers, etc.

I have replaced the sensor with a brand new S4 OEM sensor, thinking that perhaps the old one is faulty, but the problem persists.

What I'm looking for is some idea on how to calibrate this sensor to read properly, or perhaps there is some reason the OEM one isn't reading right.

I have the old sensor, which I believe is still good (since the readings are the exact same on the new one), so I can use that to test with a multimeter at different temps as needed.
