What to ceramic coat/polish

So the engine is out of the car right now and stripped down. I want to make the engine bay look nice so I am trying to figure out what I want to do. I'm thinking of "blinging" everything and anything by ceramic coating and or polishing.

The first question is am I able to just ceramic coat everything or are there things that should be ceramic coated and others can just be polished?

Anyway, here is what I was thinking of doing.

Ceramic coat: UIM, LIM, greddy elbow, turbo manifold, compressor housing, downpipe and midpipe

Polishing: Thermostat, water housing/pump, alternator, IC piping

Here is what the engine bay looked like prior to tear out (v-mount IC is already pulled)



Already have the UIM/LIM jet hot coated
