Weird temp readings

Weird temp readings
I was driving around today through semi stop and go traffic in 85 degree weather, at one point after driving for approx. a half hour I glanced down and noticed that my temp gauge had spiked a bit above normal, to around 2/3rds or so. I hit the air conditioner to switch on the intake fans and the temp dropped back to the normal halfway point. Just to be safe though about 10 secs later I pulled into a gas station and let it idle for about five mins, watching the temp... It seemed to be fluctuating a lot, but not going over halfway. I drove it for about another 15 mins and didn't notice any more spiking, but the temp was still fluctuating more than usual I think.
Any ideas? I haven't been able to check the coolant yet, the engine bay was too hot. The car was idling fine, running fine as far as I could tell, didn't really push it though.
Edit: Almost forgot, this did happen once before in about the same temp weather.. Hell, even on the same street.

Can some one explain to me why so many people have not done the fan mod yet? Also, how come everyone in this forum has not gotten a temp gauge? It boggles my mind to try to understand why so many people have gotten one yet. Keep your fans on at all times or your car will overheat (unless your in subzero weather and even then...). Don't tell me you are trying to save eletricity or something lol!!!
