I'd imagine someone has already experimented with this idea, but I wasn't able to find anything.

I was thinking about making a tray to cover a lot more of the underbody to smooth out the airflow somewhat. I'm only going into my second year of schooling as a mechanical engineer so...I'm not quite sure what this would do in terms of engine bay temps, and car stability.

I was thinking about putting vents in it under the turbos to draw some air out of the engine bay, I assume it would be low pressure under the tray and high inside the engine bay?

Any thoughts/advice?

A truly functional aerodynamic package is the sum of numerous parts, not just one component. While smoothing the underbody by itself will help in some aspects, it can be just as detrimental in others. You will need a host of other components in order to realize any benefits of the smooth underbody. And you need to be extremely careful about how you affect the engine bay airflow for cooling purposes. The pressure everywhere in the engine bay is not necessarily higher than the pressure outside, so you can't just cover everything up except the turbo area and expect everything to function properly.
