I've used Tokiko & KYB on a couple of my old cars (not RX7s) and have really liked them. I haven't felt the need to replace the struts on the 7 because the stock struts are nice themselves. Whatever you do, it's probably best to replace at least both rears as opposed to just the broken one. If you upgrade to a different brand, you should probably redo all four. while you're at it, may as well get some new springs & drop the car a bit (if you're not running 18's).
I've got the Eibach 1" drop on mine w/ stock struts. Just the right stiffness, doesn't scrape, and looks great.
And seeing as how you're spending all this money anyway, get a strut tower brace if you don't already have one - makes the car feel so much more solid it's a wonder Mazda didn't put them on all the cars. I just put one in a couple weeks ago and was amazed at how much of a difference it made

Any name brand shock is usually better than the OEM shocks....Tockico, etc.....but I have always liked Koni yellow's on my other cars. They are relatively inexpensive, you can sometimes find groupbuys on them for less than $400.....I'm just not sure if they make them for the FD....

Regardless of what you want to get I highly recommend that you purchase them from www.shox.com. I was pricing out springs/shocks/struts last year, they were able to outright beat the cheapest price for a set of Tockicos Illuminas and Eibach Pro-Kits by almost 30%. Nobody was even close.
They don't advertise their prices online, you'll have to "get a quote" from them. After I got a quote, I spoke to someone there who further reduced their price (not by much, I could only haggle them down another 15%). Everything was in stock and the parts arrived 4 business days later.
And if you do happen to get them from shox, tell 'em Teddy sent ya, I've referred a couple of folks and I'm getting ready to upgrade on my new RX... Hopefully they'll hook me up again!

shock replacements
I've had great luck with the OE R1 shocks. I've installed 2 sets. They're quite inexpensive from Mazda Comp, and even better when bought used from someone else (with <20000 miles on them I had the Tokico Illuminas before...hated fooling with the settings, and the car didn't handle any better than the OE shocks. I currently have H&R Sport Springs, and Eibach Comp sway bars fr/rr.
