1) Support it properly, use a tranny jack
2) Make sure the car is lifted enough to take it out on the jack with the bellhousing attached. Ask how I know :o)
3) Expect oil leaking out of every orifice in the tranny.
4) Don't bang up any of the sensors on the extension housing. The wiring is very easy to damage, and the sensors are $35/ea.
5) Read up on fd3s.net and other sites for procedures on dropping the tranny.

Depending on what you are doing, you might want to drain the fluid first. After that, it's pretty straight forward:
1. Disconnect the battery and the starter
2. Remove the under braces and trays
3. Remove the midpipe/cat
4. Remove the drive shaft
5. Remove the PPF bolts on the tranny side
6. Remove the starter
7. Unbolt the slave cylinder and the tranny wiring connections
8. Open inspection plate and separate the throw-out bearing from the pressure plate
9. Unbolt the tranny
10. Support and remove the tranny
I might have missed part or two, but that's the jist of it.
Now, the upper bolts on the bellhousing can be a pain to remove from under the car depending on what tools you have. I usually take the extra 5 minutes and remove the UIM. That allows me easy access from above on the top two bolts.
