question about fan operation
I have an aftermarket temperature gauge and it shows steady temperature when my ac is on. But as soon as i switch my ac off the temperature starts to rise, specially when im driving slow or on a signal(the temperature stays steady when im driving above 40 mph) I did some search and found out that the temperature stays steady with ac on because the ac fan is working and even when the ac is off the fan comes into operation once the temperature reaches a maximum set point. What i want to know is that approximately at what temperature does this fan starts to operate so that i know the fan is working correctly. Also does the car have one fan or two seperate fans(one for ac and one for radiator?)

don't race, don't need to
go to iluvmyRX7.com. Find the manual for your year. In section F, around page F-144, you will find a WONDERFUL description of the fan system and how it operates. In short:
No lights (parking or otherwise), heater blower fan set to only 1 or 2, rear defroster off, no AC: fans (both of them) are to come on low at 227 F
all above off, but AC on, fan on low all the time. Coolant will probably go down to thermostat opening point and hover (roughly 180F). This matches what you describe, though you didn't give a temp number.
turn on any of these OTHER than the AC: fans on low at 221.
Turn on ONE of the above AND AC, fans on Med at 221F
Electrical load, AC, and thermoswitch on (over 226F) fans on High.
I have no idea if the fans go to a lower speed when the temp falls below the set points. Don't WANT to know either, at least not firsthand!
I DO know that when the fans come on low with say the parking lights on, they stay on until the temp goes down to 195F or so. Pretty quickly too. Another cool site is http://www.scuderiaciriani.com/rx7/cooling.html This shows some tests done on the system to see how it behaves. Hope this starts to answer your question. I've read keeping the fans on ALL the time eventually causes them to fail, and puts some strain on the Alt. Just passin it on..

I'm a CF and poop smith
there are 3 settings for the fan, just ground the different relays to control the speeds (aka the fan mod).
BTW: If you have not done this mod yet to keep your temps down, shame on you. It's gotta be one of the easiest mods to do and a sure fire way to keep those hot temps down.
