Most likely it is the t-stat, possibly also a bad radiator cap. Do the fans come on?

you wanna check your fans if they come on /you wanna replace your thermo switch for the one of 90-92 rx7 non turbo so that your fans kick on much sooner
190/replace rad cap/ast cup/ drill your t-stat /seal ur radiator under tray/check for leaks.

honestly sounds like a bad coolant seal, thats why the coolant is being pushed out the over flow.

Is the car low on coolant after you shut it down?

Rad cap or coolant leak in a hose. Get a coolant system pressure tester.

Sounds like a bad t-stat to me. When you replace it, only use an OEM part. Don't buy some parts store piece of crap!!!
