this is going too far

So after dropping in a brand new engine the car still doesn't work correctly. I got rid of the smoke but now I have idle and ecu problems. When I start the car, the idle jumps up and down between 1500 and 2500 rpm when the car reaches about 180 F. The weird thing is that my autometer gauge reads 250 F, my power fc reads 106 C, but when I used a thermal gun on the radiator housing it came out to be 180 F. I haven't checked the TPS (need to buy a volt meter), but the idle screw was screwed in all the way. I had a local shop try to tune it but I'm not too sure they knew exactly what they were doing.

Please guys I'm desperate, I've had this car for two years now trying to get it running and nothing seems to work. Please, I don't want to sell my FD, as much as I hate the thing I love it to death.

idle hunt is most likely the result of the pfc relearning....

that's what I thought too but it does it every single time I use the car. I did the normal procedure when the car first started to let the power FC get used to the new stuff, (10 minutes idle, 10 minutes with the fans on).

did try adjusting the idle air screw in the TB.
