Boost and water temp for sure, then an EGT gauge. Those are my top three.

boost and water temp definetely.
after that, it's up to u
I would probably get an oil pressure.
a lot of stock oil pressure gauges on rx-7s are broken or not working properly.
and in my opinion, fds need reliable and more accurate oil pressure gauge due to the fact that fds consume quite a bit of oil, and also a lot of them has oil leaks.

Why not get the PLX Devices DM-100: http://www.plxdevices.com/products/dm100/

From one gauge you can control and display up to 32 sensors so you can add on as many sensors as you wish. My choices would be boost, AFR, and water temp, but I'd also like EGT and oil temp.

Boost and water are a must.. than just anything you like. But definitely water, as the stock gauges are not accurate at all... boost is very important too.
