FC thermoswitch installed, fan control question

I finished replacing the thermoswitch the other day with the FC switch and now I'm able to control the fans in a way similar to the fan mod where you ground the lead on the ecu... After driving around and coming to my destination my temp with the car sitting will be around 200-220F (idling no fans or anything). I shut off the car but turn the key back to ignition on, then I turn on the AC and set fans to 1.. the fans turn on low speed for a couple seconds and then immediately switches to medium speed, at that point I can turn off the AC and fan and the fans will kick back down to low speed. Then I can remove the key completely and the fans stay running for 10 minutes and shut off. Is this normal? Can anyone with the FC switch try this and see if they get the same results.. Before I installed the thermoswitch I would use this exact method to run my fans, but I had to leave the key in the ignition or else the fans would turn off.. so I'm a bit confused as to why the FC thermoswitch changed the operation. It's actually a positive benefit though as I don't need to leave the keys in the car and they shut themselves off, I just want to understand why its happening.
