What it does is sends a signal to the main ecu whenever lots of current is being drawn from the electrical system. (AC, Headlights, rear defroster) The signal it sends to the ecu is to raise the rpm of the motor (which is only of any real concern at idle.)

Other things that will be affected, I beleive it also has something to do with when the fans kick into medium and high mode.

On a guess if you unplugged it you should be ok for a while as long as you turn off any thing that draws lots of power when the car is sitting, and you watch your temps to make sure you don't overheat.
