Coolant Issue

Having a strange issue. The car runs fine and all, I'll drive on the interstate, around town, any type of spirited driving and it's fine. When I'm pulling in the driveway the "Add Coolant Light" illuminates and that awesome beeping sound starts. I figure the temps are high so I crank the heater on to keep the fan going, pop the hood to vent it, and leave the engine going so the pump keeps running. After 7-10 mins the light extinguishes. After the car cools I checked the coolant levels and they were fine, I popped the radiator cap and could see coolant about 3 inches from the top. To me this seems to be correct so I am confused as to why the coolant light is coming on with the proper level in it. The water temperature gauge doesn't move past the center, but I know that the gauge isn't reliable. Any input on why the Coolant light would come on?

Put a aux temp gauge on, to see what your temps really are. I'm sure you are running very hot.
