What is the difference between mechanical and electrical, and does it matter which you get? Also how often do you use the hold/warning/playback? Are they really needed?

For the mechanical ones you have to run a vacuum line from your manifold to the gauge in your car.

For an elctrical one you run the vacuum line from the manifold to a little box, then you just have to run some wires to your cabin instead of a vacuum line.

I think I good mechanical gauge will be just as good as a good eletrical one. Its just easier to run a few wires then a vacuum line. You can only get hold/warning/playback options on an electrical gauge though. As for if they are really needed. Well, You wouldn't use it all the time but it would certainly be nice to have, especally the warning.

Which boost gauge is used most? What kind is everyone using?

I put in the Defi gauge for several reasons. I wanted my meter to be in lbs instead of bars. I also use the peak button and really like having it. I put in the 60mm one and it is easy to read. The only problem I have ever heard about the gauge is that it has a green backlit light in it and some people don't like that it does not match the rest of the car. Most will agree that it is one of the more accurate gauges out there.
