My speedo reads 75MPH @ 8,000RPM in 2nd gear.

Well you can avoid the calculations all you want. They don't lie. Just because you have a limiting factor doesn't mean that the car still isn't capable of performing a certain way. The only limiting factor here is the factory tune of the ecu. Anyone with a aftermarket ecu can hit those speeds in those 3 lower gears easily.
