The following applies to US cars:
AFAIK the only parts that are not interchangeable are the A-pillars, headliner, and seatbelts (because of the motorized belts in the S5). If you swap all three of those with the motorized belts, then everything will work.
If you want to stay with manual seat belts, you should be able to swap anything other than those (seats, door panels, carpet, etc.). Some (maybe all?) S5 doors have a speaker which not all (or maybe none?) of the S4 cars had; so the S5 door panels (some? all?) have a speaker grille.
For non US cars I don't know if S5s got the crazy seatbelts, so there may not be any issues
