The FSM says full lift is 8-10mm so that sounds fine. You can push it fully open by hand to see how far it should go.

The proper way to test it is to put it in cold (or warm) water and heat it while measuring the water temp. It should start to open at ~82degC and be fully open at 95degC. When it opens is as important as how far it opens.

Putting a $10 thermostat in your FC is a very silly thing to do. Only use an OEM thermostat from Mazda.

NZ is right man... don't wanna skimp on the cooling system. Expecially because a mazda one isn't much more. You just have to order it. Check Napa, I know napa sucks, but sometimes they have the OEM one.
