The thermo sensor on top of the waterpump

What does it ACTUALLY do? I know its not the temp sensor (the green plug on the back)
Do i need it to drive?
if you have your emissions completely removed, would the sensor matter at all?
Ive asked a few "veterans" and have gotten mixed answers.

It is for the auxillary electric fan mounted at the front of the radiator found on all automatics and some turbos. Tells the fan control unit when to turn it on.
