simple flames question (i know i know)

what causes flames on accelleration?
i get them on decelleration in my zero emissions n/a, but i know of some cars that'll shoot em on accel. What causes that and makes the difference between accell and decell; or could make you pop a flame as soon as you stab the throddle?

running way to rich w/ no cats causes flames.

It's the really hot unburned fuel that reach the air at the end of the exhaust. It is so hot that it will burn once in contact with oxygen.

This is what I understood from my search. Can't say anything about accel or decel...
