Quick release harness thought

I recently had a thought about making the FC harness a quick release of sorts (for those who pull engines and what not I would like your input). I saw a a guy who built a custom Ford truck used a MIL-C-38999 connecter (I think) assembly for the engine harness. Basically the thought is you take a wall mount version of the MIL-C-38999 connector and mount it to the firewall. Split the harness from the firewall to the engine and mount the firewall portion of the harness on the wall mount, and mount the other portion of the to the plug portion. These plugs are military spec so they can handle everything your car throws at it.

What i'm concerned about is what Amparage I would have to pass through it. I do not want to fuse the harness, nor any connections associated with it. Also how many connections should be made? I'm looking at a 61 connection type, but they offer various other connections which mount less connections. I'm also curious since I will be doing this in the near future would it be beneficial to replace the current wires with 12 gauge (or is the harness gauge 16 or so?)?

The benifite being instead of having to pull the connections from the engine, all you'd have to do is unhook that one connection and pull the engine. Is there anything that I should look out for?
