Quick guesses aside from the obvious possible reasons:
a) You're having a slow/small leak coming into your water jacket from the combustion
chamber (tends to happen to higher mileage rotaries) which causes alot of problems.....including air in the system and bubbling)

b) You're using an aftermarket underdrive pulley (Racing BEAT or RX7.com)

c)You have more antifreeze than water in your system

d) You have a shitload of mineral deposits in your engine block and cooling system and you need to use a coolant flush additive once or twice and use a 50/50 or 60/40 mix of water/coolant.

and e) I doubt it, but, worn away waterpump fins.

Yes, it will have major issues. Your car overheats because something is wrong. Fix it.

Cooling system troubleshooting: http://www.aaroncake.net/rx-7/cooling.htm

A search of "thermostat removal" will also yield much information.

E) i changed the waterpump
D) i did flush the radiator
C) i made sure i had a 50/50 water/anifrezee mixture
B) the car is all stock
A) not sure, but if it was what could i do besides rebuild the engine?
thanks

Nobody asked the obvious....

Are you using a genuine Mazda thermostat?

Although, I'm sure it's in Aaron Cake's link.

it is never recommended to use anything but a Mazda OEM thermostat.

This is not something you want to just save a measly $10 on.

No aftermarket Thermostats are designed to work with a rotary engine and its cooling system design. Instead there are aftermarket thermostats that fit.

Get the correct thermostat, and never run without a thermostat

at very least use a restrictor plate for true racing situations (not street driven cars).

But for a street driven rotary engine, use only the Mazda thermostat.
