Minimalist

I want a clean and simple fc engine bay what is the bare minimum I would need? obviously: radiator, alternator, starter, brake booster, power steering... What else? What about injectors? Ecu stuff?

Even from your "obvious" list you could delete power steering and brake booster.

Carb would eliminate ECU/injectors and wiring.

All you really need to run a rotary is-
1) coolant lines from waterpump to radiator
2) oil cooler lines to an oil cooler (or the early "beehive" stock oil cooler that mounts under the oil filter)
3) 1 gas line to a carb (add 1 wire or 1 cable if not race carb without choke)
4) fuel pressure regulator (does not have to be in engine bay)
5) throttle cable to the carb
6) distributor with points
7) two coils (does not have to be in engine bay)
8) ignition wires from the coils to the distributor and distributor to the spark plugs.

9) You should run an alternator if you don't want to run your battery down faster than your gas tank (does not have to be in engine bay).

10) You should run a starter if you don't want to bump start the car every time (does not have to be in engine bay).

11) You should run a brake booster if you want your car to stop before hitting things (does not have to be in engine bay).

12) You should run an air filter if you don't want your side seals to die an early death.

In and of itself not particularly stupid, but not very well presented, either.

The reason that none of your obvious components are actually obvious at all is because you don't say what the car has to do.
My friend Sigfrid would assert that his car absolutely must have AC, I would argue the opposite.
I must pass a visual/rolling road emissions test, do you?
How variable is your climate, how often and where is the car driven?

First you must define the requirements and then you know the components necessary to meet them.

Spend some time evaluating the bay in stock form and the layout makes sense, especially if viewed simultaneously through a marketing and engineering eye.
Engineering had to allocate space for any of the various options that marketing wanted to package, so even if your particular car didn't have AC and ABS, every other component had to pretend it was there, and snake around accordingly.

Point being, the individual components of the stock engine bay aren't in and of themselves ugly, but some of them are very stupidly placed and creative rearranging can lead to a very tidy but completely intact bay.

You could actually get rid of the radiator, alternator, starter, brake booster, and power steering, depending on the requirements of the car. Actually, it is really strange that you consider power steering a requirement, given that a lot of RX-7s were sold without it and most performance-oriented drivers don't want it.

Factory manual steering here, I love it. Every other option though lol
