The better Japanese models (I think GT-Limited and up) came with digital climate control. You set the temperature you want the car at, and the AC maintains that temp.
The only problem is there is NO documentation on that sucker, and there's no idea if it would work on a US car. I have a buddy with a 240sx that has the Japanese auto climate control head unit. After doing some research, we discovered that there has to be an outside air temp sensor, an sunlight sensor, a cabin temp sensor...all stuff that's not on the car stock.
Who knows - it might be plug and play. But, it would be tricky to get your hands on one - I've yet to find a source for one.
