leaving the oil cooler thermal bypass out

I searched and I didn't find a thread of this kind for FC.
So what happens if you leave it out?'
I read that on older or newer models that may cause problem with oil going into the cooler and will bypass it because outlet hose is less restrictive.
But I looked at my oil cooler and for me it seems there is no way that can happen.. Right?

I left it out because my oil temp sender shows 120C what is way hot, i know it's not 100% accurate but still.. hot.

Not gonna drive it in winter anyway, only warm weather and maybe 5 months a year.

What could happen?

What could happen?
If you leave it out, oil will never flow through the cooler.

The bypass leaves the bypass hole open when cold, and closes it when hot.

If you do remove the thermostat, you need to plug the bypass hole.

There is no valid reason to ever remove the bypass unless you are crazy paranoid that it will fail somehow and 100% reliability is your only concern, and the car will only go through warmup once per day in the pit lanes before the start of a 24 hour endurance race.

i checked the thermal bypass, works okay, opens up like 10mm or so.
The problem was high oil temps, but now i have new used oem cooler and the temperature is the same but i measured it directly on oil filter with an IR thermometer and its about 90-100C, so i guess my sender is not sending correctly.
