Nope, I went with a base GTU. Although it was actually harder to find, but at least I left one more GTUs in the world for everyone else to enjoy! My GTU(the new donor chassis) is basically a GTUs without the following:
-5spd tranny(it's an auto)
-insulation removed(I'll be doing that soon)
-power steering
-4.3 gear and pinion(gonna have to buy one, OUCH )
-Suspension(who gives a rat's ***, coilovers baby!)
-GTUs steering column(again, I'll live)
-you get the idea...
Basically it's a whole car, but all I want is the chassis(no sunroof!), so I'm stripping it down and transfering all the turbo parts over. The car weighs about 2700 right now, with the auto tranny, stereo stuff, insulation, etc, I'm hoping that the removal of the preceding plus aftermarket seats and other lightweight goodies will compensate for the heavier TII engine/tranny/driveline. When I'm done, if I've done everything right, I should weigh in at the Infini specs, in fact, perhaps a few ounces less since I'll have no rear wiper or power windows. Just unadulterated performance! I'll definitely keep everyone updated about it. I'm still deciding if I'm actually gonna badge it as an Infini, or just leave it as an Infini-spec...

Its very possible to import a japanese FC. There is a lot of procedure to go through, and in the end it will probably have cost 15k+ not including the price of the car.

Nope, Infini had a manual rack with a ratio of something like 17:1, which is about half way between our manual rack, and the the power rack. I would KILL for one! I don't think any other spec RX-7 came with one except the Infinis, but if there was one, someone let me know... I want one bad!

isn't there a way to change the gearing in the rack(s) already in the car?

Changing the gearing? I've never heard of it, but man am I interested! The only alternative I can think of it having something custom made, which is beaucoup bucks.
