There really aren't any videos available except for the Atkins and Rotary Aviation rebuild videos. http://www.atkinsrotary.com and http://www.rotaryaviation.com . Both cover disassembly and reassembly of the engine.
I'm a litle worried that this is your first car and you have no idea with regards to the rotary. In the wrong hands these engines (and any 16 year old sports car) can be a real headache and a huge money pit.
For lots of info, the first place to check are the sticky posts at the top of this forum. Then, hit the Archives and read through the how-tos and information threads available there. Aside from that, just lurking and reading (taking anything said that sounds wierd with a grain of salt) can be a huge source of information.

You are in the san diego area, this weekend is the SoCal RX monthly club meet. http://socal7s.org/calendar_details.aspx?id=84
Go see if you can go to the meet and check out the other rotaries. They are really nice folks and can give you some ideas and point you to local help if needed
