Heat problem

All:

With a new engine and Haltech installed (and new radiator and thermostat), I'm getting around 190 degrees when idle and the car is totally warm. What bothers me however, is when I'm taking the cars revs up above 4k on the highway. The needle in the stock cluster sets in the middle, but the Haltech is saying that I've got upwards of 205 degrees. Sometimes, it hits 210 degrees. I haven't watched it go beyond that and of course, after I rev the car down, the temperature goes down.

I know that the thermostat is ok, and I know that the fan is blowing air when the thermostat opens. My question is whether the Haltech is reading accurate enough that that's were the car normally functions or am I having cooling problems with the radiator.

The only thing I don't have is the undercarriage shroud that bolts underneath the car to scoop air up. Is this what's making the car run high temps? Or is this high temps?

Stock temp gauge sucks - the Haltech reading is a bit more accurate.
