Try and get all of the air bubbles out as best you can. Did you replace the thermostat with a OEM Mazda one? They seem to be the only ones that work correctly. Check to see if your clutch fan is working properly. Check the radiator for cold spots after the car is warm, indicating a clogged radiator. I've had that happen. Also, do you have the fan shroud and plastic underbelly tray in place? It wouldn't hurt to replace your radiator cap either.

Oh, and welcome to the rx7club

Overheating when moving has nothign to do with the fan clutch. At speed, the fan isn't doing anything. Generally, overheating when moving means either the rad isn't cooling the water properly, or the water isn't getting circulated. Theres a good chance your rad is corroded and has very little flow. The other possibility is fried coolant seals, which becomes more likely the more it overheats.
