Too small and the engine won't rotate....in a bind.
Too large and there's too much slop and that ain't no good either.
The thickness is determined during the rebuild. Look in the ENGINE section of the FSM and the rebuilding of the engine. It tells how to determine the right thickness towards the end of the rebuilding of the engine.

You would typically re-use the existing spacer, then measure endplay with the engine assembled. If endplay is out of spec, a different spacer should be used to replace it. Like Hailers said, it's in the FSM.

One of the easiest things to do if you don't want to bother measuring is get a net set of Torrington bearings and a V spacer. 9 times out of 10, this puts clearance right in the middle.
