damn coolant light!!
"Plenty of coolant" doesnt cut it actually....you have to have at least the necessary amount of coolant, otherwise the little sensor gets un-grounded, and you get the annoying buzzer and light 
IF you dont have any problems with your cooling system, and the sensor/wiring is correct, then its probably some air bubble in the cooling system. Bleed it/burp it, and you'll be set...
