The stock airbox or a open filter will absorb the heat from the engine bay and cause the air to be thinner and less effective. Especially if you look at the stock setup, it runs from one side of the engine bay to the other and is made of cheap plastic...
Using a box around the filter (and tubing from the wheel area) insulates the filter from the engine bay heat.
His setup isn't a complete insultation due to the material, but it is effective. Obviously, it isn't as effective as other material, but it is ALOT better than just an open filter.
Related idea: would putting some kind of foam on the inside provide enough extra insulation to make it worth it? [And no, I'm not referring to putting it on the top edges because that should be done anyways to create a good seal.]

The engine is probably the cleanest part though. This poor FC has had quite a history of abuse from someone cutting the rockers to it being curbed, not lifted properly and generally not maintained well. I think I've done a decent job of bringing it back and it will make a fun car to use for autox and such.
