Bouncing on launch or gear change

My 7 bounces/jackrabbits/etc when starting from a stop in 1st or when switching between lower gears. Basically the car behaves as if I missed the shift (very similar to when someone is first learning to drive a manual). The bounce seems to be up and down, not side to side. The only way to avoid it is to launch the car very, very slowly.

So far, I’ve replaced the clutch and rebuilt the clutch slave cylinder. The tranny mounts looked ok to me. I have a new clutch master cylinder on order. What should else should I try? The mounts look stock, should order a different type?
