Can I just make my own new one?
10 gauge stranded cable? The old one is totally chewed to bits and looks really bad. I should be able to just use the old harness and "re-create it"....

Sure, but 10 gauge sounds kind of thin. I'd use 4 or 6 gauge for all the wiring in the charging system. If the battery has been relocated, then I'd use 2 gauge coming from the battery.
