The S4's temp guage is already linear, but I believe the S5 one is not. I've seen the how-to for linearising the S6 guage, but I've never seen one on this forum for the S5.
It's unlikely that the Miata and S5 gauges are similar enough that you could use the how-to in that link, so unless someone knows of one for the S5 or an electronics wizz can work it out for you I think you're stuck with what you've got.
