How do you tell the cars apart as in the models, i.e. GXL, GTU, GTUs? Are there any visible or easy to inspect parts that I could use to tell it apart? Or how about VIN?

Well, the 89-90 cars usually came with a sticker on the side that denoted the model level.
There were no trim levels in 1991, it was either coupe, turbo, or convertible. The coupe was grouped into option packages. Package A included upgraded trim, power sunroof, tilt steering, adjustable lumbar and thigh support (on driver's seat), cruise control, four piston front calipers and vented rear discs. Package B (available on turbo) included leather seats, CD player, and a rear cargo cover (standard on turbo).
The GTUs - there were a bunch in 1989 (what 500?) and 100 in 1990. Bare bones performance N/A. No power windows, locks, no sunroof. Had a 4.3 final drive. Turbo suspension and brakes. Aluminum hood.
The GTU - basically the SE renamed.
The GXL - the luxury model of 1989-90.
If you know it's a 91, it's just a coupe, no specific model. The rest are fairly easy to tell apart.
