Alright, updating this thread as promised.
Much to my chagrin I had rubbing issues both in the front and rear but not where I had expected it. With the 225s in the front I had no rubbing issues with my struts however I did have issues with rubbing on the drivers side fender. Only the drivers side fender. Although the spacers are the same width and the clearance is the same between the strut and tire, the drivers side tire sticks out further. The same goes for the passenger side rear, where I had issues with my 245 drag radials rubbing.
Ive now solved the problem by dropping to a 205 55 in the front and relocating the 225s to the rear.
Here are some shots of the old (and rubbing) 225 and 245 setup:
And the current setup:
