few questions here. . .
1 - which egt probe/gauge does everyone reccomend and where did you get it?
2- where does everyone reccomend putting the probe? i've heard a few different opinions on the matter. some people think they should put it after the turbo, which doesn't seem right to me because then you're measuring the average temperature of all of the exhaust. seems to me like it should be in one of the runners leading to the turbo. furthermore, intuition tells me that it should be in the runner coming off of the last rotor connected to the fuel rail since that seems as though it should be the leanest.

I'm using defi. My egt probe is mounted in the exhaust housing right by the flange where it bolts to the exhaust manifold. I would have to assume having individual egt probes mounted in each runner would be optimal just for tuning.

The center rotor runs the leanest based on manifold design and the extra heat it gets from it's central location. When these engines blow, the center usually goes. The best way is to probe all three but you could just probe the center.

The only thing I've seen that can do multiple digital readouts is for airplanes/aircraft. They can do any number of egt's simultaneously but for a 4 cylinder (rotor 1,2,3 and post turbo) they are about $2000.
If you buy single channel electric gauges you are looking at $250/gauge, plus $250/probe...so you're paying 50% more (including probes) for the full screen digital vs. individual 2 1/16" gauges. The ones I saw are about 4x4" and are orange text on black background. You can also get screens that you can flip through them by toggling buttons on the side for all your other gauges (fuel pressure, fuel level, coolant temp, oil temp/pressure, etc, etc) but be prepared for the cost to integrate all that information into one source.
