A lot of it will depend on what color the body is and if you can tie it into the wheels, i.e. polished fat lips if you polish the trim. Since there is little, if any, bright work on the 1st gens, the trim usually looks best painted.

where did you get your fender flares?
and the trim on the gs should be a simi-gloss black but its what you want to do ive seen polished, painted,and black . on my car its black but just recently the black paint started to fall off and it is polished underneath.

Paint them your accent color. I will be doing mine white. If it ends up looking like crap, I will do body color.

Yep, there is monochromatic. Like I did w/ my Z. Black trim is good if you have the body trim on side panels in black. Blends in w/ the windows best too esp if they are tinted. Unless you leave off the door trim-black is best IMO. I’m a professional artist.

Chrome is Good

It all depends on the look you are going for, but be consistent. If you take the stainless trim off, and strip it with paint remover, it is already pretty shiny, just needs a bit of polishing. And be careful - the metal is pretty thin, and those polishing wheels have a habit of grabbing things.

If you use the polished look, find some early (78-80) GLC door handles, which are the same as ours, but chrome plated. I was inconsistent with my convertible because I kept the black mirrors, but here is a photo, such as it is:
