The top one is the coolant sensor. It controls the automatic chock. That one can actually be repaired. Carefully skin back the insulation and solder on new leads. You'll need to double prong connector that it hooks to. It's mate is right there in the wiring harness.
The one on the oil pan is a oil temp sensor. I believe this is used for the cold start assist which can be removed anyway.
