I have a 79 rx7 that I have owned from 1979. Still drive few times a year. Trying to deceid if ground up restoration is worth effort of if parts are hard to come by. Mostly need body work and interior.

 

Definately restore it. It will be worth the money and time. I am currently restoring an 82 GSL. Loads of fun. Definately fix her up! SA RX-7's are becoming quite rare, and that should add to the value of the car.

I second (or third) the idea of victoriabritish. They have just about every interior part I can think of. I can't personally swear by the quality but I've heard good things.
