Issue with manifold o-rings

I think I have a water leak with a fresh rebuild with the manifold o-rings. My radiator water level is going down. I havn't put the car on the road yet and have only ran it on the jackstand for now. My temp gets up to 200 and I shut it down. Can I just replace the o-rings with 20mm freeze plugs and not have any issues with the carb? The car won't be driven in cold weather. Is the water going to the carb used to get the carb up to temp or is it used for cooling?

I had the previous engine go bad because of the o-rings and the person driving the car kept driving until the block split at the front iron and front rotor housing.

The water going to the carb is to help everything get to the right temp. You can install freeze plugs without any ill effects (and you won't have to clean up as much if you remove the manifold without draining first).

the coolant flows thru the intake not the carb. putting freeze plugs in them is what alot of ppl do that way u dont have to drain the coolant to remove the intake.
