HELP-normal 13B engine temps??!

HELP-normal 13B engine temps??!

I want to get an autometer engine temp gauge for my streetported 13B 1980 rx7 track car. All I've ever had are the stock gauges so I dont really know what the happy operating temps are for a rotary.
What is (in farenheit) Cold, Normal and Hot for these motors?

The Racing Beat book says
"Under normal conditions, the engine water temp should never exceed 185degrees F. However, engine damage is not likely to occur even up to 200degrees F if the temperature rises slowly."
