engine swap- what stock parts should I leave off?

I got my first rx7 a few weeks ago-very good engine-rough body. I got my second rx7 a couple days ago, good body, blown engine. Both are 100% stock complete. I am going down the performance road, but gradually, as I can afford it. What parts should I leave off as I'm doing the swap, things that will eventually come off anyway?
Obvious first thoughts are rat's nest and air conditioning. Any thing else?
Both are 83, but the good body also has rear discs and power windows and leather seats and all that shiny stuff.

What is the best source vehicle for an appropriate electric fan? I'm sure there are many posts in search under this topic, but, since we're talking about it anyway...
