Choke Cable Question

First my car is a 83 LE completely stock in the engine bay. I attempted to switch out my stock carb with a rebuild. Couldn't get the car to stay started so I put back in the original. Now my choke won't engage and stay out. I replaced the entire choke assembly and that made no difference. Is there something on the carb that would keep the choke from staying out and actually working? When I pull on the choke it works, except for the staying out part. Any guidance would be greatly appreciated.

There is a thermo sensor on the back side of the waterpump housing. This sensor tells the ecu what the coolant temp is, which in turn modulates the magnet in the choke unit. Either the choke unit isn't plugged in, (under the dash), or the sensor isn't, or the sensor wires are broke,(as in my case).

Ok, I know this is sorta unrelated, but I know that since I took my airbox flapper, and pre-heater hose out I wish my choke would stay out just a bit longer. I think also that some modefied nikki carbs lose the automatic choke once they are installed but that doesnt really make sense to me. Anyway I changed my clutch cable not too long ago and realized that the whole magnetic part is just a little box behind the dash with a few wires coming out of it, so I figured out there must be a way to wire it up so that it would hold when say a switch was flipped. For me this would be awesome for those colder days, only problem is reading wiring diagrams is not my forte so has anyone done this or know how I would wire such a switch up? I know how to spice it into an ACC source and wire a relay if its needed, just need an idea on which wires to work with. I think a little illuminated switch would be rad?
