With the choke out all the way my engine runs at 2500RPM Howerver the owners manual tells me that I should let it warm up at 2000. Once it is warm it runs around 750 - 950 RPM.

I never need to pull my choke out all the way. I have it pulled mostly out while cranking, then I push it in untill the RPMs go to about 1500 or 1000. Then I start driving slowly untill it warms up. I never wait till it pops in by itself. There's really no point. If it idles above 500RPM, I'm just fine so I push it in manually. I usualy idle between 800 and 1000 depending on the oldschool carby's mood (I can kick it down to 700 or lower sometimes depending on the oil temp). Warn carb butterfly bushings are fun to play with.
