Any advice on using the "AC Clutch" wire for a internal switch?

The car being preped for road race.

If it's a track car only, I'd say ditch the fan thermostat & wiring. Hook up a toggle switch/relay into the cockpit. I only use the efan at idle and around the pits if needed. Keep it simple and reliable. I've seen a couple of those thermostat boxes burn up.
