that wont' rub with anything?

Pretty much what I want is the tallest and widest tires I can fit on my 18x9s w/o rubbing anything on the car. Keeping in mind my car is lowered 1/25".

275/40 is already almost 3/4-inch too tall in 17-inch diameter. The tallest I would go would be 275/35 but it looks like 285/35 is doable from what Vosko said.

Technically, a 275/35 is the largest recommended size for a 18x9 rim, but for the best handling, 265/35 is the largest size you should run on a 18x9 wheel.

what tires were they useing? I went digging through the tire specs at tirerack and I codlnt' find a 285/35 that would fit on a 9" wide rim.

for a 9" you should use a 265/35/19. If you had a 9.5-10", i'd say 275/35 or 285/30, depending on the front tire you want to match it with.

I'm using 275/35/18 on a 18x9 with 38 offset and don't rub. I'm lowered 342mm wheel center to fender.
