Congratulations. Don't ruin the experience by settling for someone else's trash. Buy the car you want. Regret with buying the wrong car will stick with you indefinitely and you will always be in a state of recovery, even after you dump it off on someone else.
I’ve been reading where parts for this car aren't the easiest to acquire, so on one hand, its great buying something built, but on other hand would love to get an “unmolested” one, and the build myself, but not too many fd’s out there that are stock.
The best general advice is to buy the best condition car you can afford. For someone entering the world of old or collector type vehicles you need to be honest with yourself. Honest in your level of appreciation for your chosen vehicle, honest in your own mechanical abilities and honest in how much you are able or willing to spend to obtain what you want.
Chances are, you will exceed at least one, if not all those estimates before you reach the end of your project. And once there, its not over as these things require maintenance to keep that hard earned investment intact. You will only get out of it what you put into it, often times less. But spending more up front on a better car will often save time, money and heartache down the road.
